Jamaican Jerk Chicken
Jerked Chicken can either be baked in the oven or on a grill. I like to season my chicken the same day I take it home from the groceries. All my meats are soaked in vinegar water before seasoning You can also soak your meat in lemon or lime juice. I don't like handling raw meat twice so I properly seasoned and put away in the freezer until I am ready to cook. The more it's marinated, the better it is. Jerk chicken is all about the seasoning and spice that is used to get that unique taste. It won't be jerk chicken unless you use those unique blend of Jamaican spices.
Hot (Spicy) Scotch Bonnet Pepper
When you see hot on any Jamaican seasoning in your supermarket, it means very spicy. This little pepper above is used in the Jamaican Jerk Seasoning and used for other cooking purposes. It's not a fruit and they comes in different shapes and color. It's belongs to the family of chili peppers. The scotch bonnet pepper should not be bitten on, if your are not used to doing so. It's one of the hottest of all peppers and will burn you tongue and throat. Jerk Seasoning usually comes in mild, medium and hot.
Achee and Saltfish (Blighia sapida)- Jamaica National Dish
The ackee fruit (Blighia sapida) is the national fruit of Jamaica. This is one of our Jamaican cuisines cooked with salted fish (cod fish or bacalao). It's known by all Jamaican as the "national dish of Jamaica". Most tourist when they go to Jamaica for the fist time and see this dish in the breakfast area of their hotel, most believes it's scrambled eggs because it do look like it. It's a delicious dish that can be served with fried dumplings, bammy, bread or cooked green banana, yam, sweet potato and boiled dumplings.
Jamaicans Like Their Soups
In most homes in Jamaica soup is usually cooked on Thursdays or Saturdays. Above is a simple chicken soup with pumpkin, zucchini, squash, corn and some little dumplings they call pillars. If you are a vegan person, this soup can be cooked without chicken and it's still delicious. There are several types of soups that are made in homes in Jamaica.

Steam cabbage is serve with meals as a side dish or eaten with bread, fried dumplings, cooked green banana, yam and other ground provision for breakfast, lunch or even dinner. You don’t have to limit cooking cabbage to only salted fish, you can can also use it with corn beef.
