Jerked Chicken can either be baked in the oven or on a grill. I like to season my chicken the same day I take it home from the groceries. All my meats are soaked in vinegar water before seasoning You can also soak your meat in lemon or lime juice. I don't like handling raw meat twice so I properly seasoned and put away in the freezer until I am ready to cook. The more it's marinated, the better it is. Jerk chicken is all about the seasoning and spice that is used to get that unique taste. It won't be jerk chicken unless you use those unique blend of Jamaican spices.

Hot (Spicy) Scotch Bonnet Pepper

When you see hot on any Jamaican seasoning in your supermarket, it means very spicy. This little pepper above is used in the Jamaican Jerk Seasoning and used for other cooking purposes. It's not a fruit and they comes in different shapes and color. It's belongs to the family of chili peppers. The scotch bonnet pepper should not be bitten on, if your are not used to doing so. It's one of the hottest of all peppers and will burn you tongue and throat. Jerk Seasoning usually comes in mild, medium and hot.

The ackee fruit (Blighia sapida) is the national fruit of Jamaica. This is one of our Jamaican cuisines cooked with salted fish (cod fish or bacalao). It's known by all Jamaican as the "national dish of Jamaica". Most tourist when they go to Jamaica for the fist time and see this dish in the breakfast area of their hotel, most believes it's scrambled eggs because it do look like it. It's a delicious dish that can be served with fried dumplings, bammy, bread or cooked green banana, yam, sweet potato and boiled dumplings.

In most homes in Jamaica soup is usually cooked on Thursdays or Saturdays. Above is a simple chicken soup with pumpkin, zucchini, squash, corn and some little dumplings they call pillars. If you are a vegan person, this soup can be cooked without chicken and it's still delicious. There are several types of soups that are made in homes in Jamaica.

Steam cabbage is serve with meals as a side dish or eaten with bread, fried dumplings, cooked green banana, yam and other ground provision for breakfast, lunch or even dinner. You don’t have to limit cooking cabbage to only salted fish, you can can also use it with corn beef.

Jamaica Red Sorrel (Hibiscus sabdariffa)

The Jamaican Sorrel was once seasonal and was our main beverages at Christmas but now you can find it in homes right through the year because it's no more seasonal. You can also find the dried one in some supermarkets or is grown in some home gardens in the United State. It's a drink that is made with ginger and sugar, and other spices. You can drink it hot like tea, you can drink it cold with lemon juice in it, or you can puts alcohol (white rum) in it and make it a different game changer. Below is the some green sorrel flowers and the drink that is made from it. Jamaican sorrel is known for it medicinal purposes also.

Carrot Juice

Carrot juice is one of Jamaicans favorite vegetable juice. There are many different ways that we do our carrot juice, but I thinks that most people enjoy it being mixed with condense milk, nutmeg and a little brandy. There are 3 ways I make my carrot juice without the condense milk. Below is a glass or carrot juice, combine with lemon, ginger and sweetened with a little sugar.

Soursop (Annona Muricata)

The fruit is called soursop due to its slightly acidic taste when ripe. This fruit is also known as  Annona muricata is a native to the Caribbean, India, Central America. Now you may find it growing in other places. It's a great drink when the fruit is ripe. It also has a lot of health benefits. As I child growing up I remembered picking the ripe soursop and eating it like a fruit. My mother would also make soursop juice, mixed with condense milk, a little nutmeg like below. It's a very delicious drink. You can also take the juice and blend with other fruits to make smoothie or you can use it to make fudges or ice cream.

Jamaican Exotic Fruits

There are many exotic fruits that was brought to Jamaica in the time of slavery. These exotic fruits are grown in many tropical island as of today. The East Indian Mangos and the Otaheite Apple is some of many fruits that was brought to Jamaica.

East Indian Mangoes

The East Indian Mangos is one of the top quality mangoes in Jamaica. It is the most like mango because of it’s texture and sweetness.

Otaheite Apple

Syzygium malaccense has a number of English common names; one such name is the Otaheite Apple. The combination of tree, flowers and fruit has been praised as the most beautiful of the genus Syzygium. The fruit is oblong-shaped and dark red in color, although some varieties have white or pink skins. The flesh is white and surrounds a large seed. Its taste is bland but refreshing. Jamaicans prepared Jam from this fruit by stewing the flesh of the fruit with brown sugar and ginger.

JAmerican Dishes

These two dishes are not Jamaican Cuisine. Jamaicans like heavy meals for breakfast and dinner and really like their meat and fish. Since I am living in the US for a long time I have learned to coordinate my meals with light and heavy with a little of our exotic spices. This can be eaten as a Vegan meal. For more Vegan go Here

Fried Green Plantain

Plantain is a popular fruit grown locally that is served as a side dish with many Jamaican cuisines. Plantain is versatile and can be used in pastries and other delicious dishes. Plantain can be used ripe or green depends on what purpose you are using it for. You can use green plantains for a good bowl of porridge, deep fried to make chips or just fry crispy for breakfast or brunch eaten with some steam cabbage like above or bacon and eggs with a cup of coffee. This is a Vegan dish with fried plantains and seasoned mushroom.

Lemon Garlic Celery Chicken Breast

This is a dish I like to make when I want a change from cooking Jamaican dishes. It's a delicious dish made with lots of garlic, celery, lemon slices and other seasoning. I used a lot of Jamaican seasoning In my cooking so, I incorporate it with American seasoning to get my JAmerican dishes. You can use chicken breast, legs or thighs. I like using the chicken breasts because I cut up a few pieces and put in my salad or slice to make sandwiches. With the usage of the sliced lemon, you'll get a tangy taste, something you'll enjoy.
